  • 1 lb. pork loin cut into stew size chunks
  • 2 cups of canned cut sweet potatoes, drained
  • 2 tart apples, sliced
  • 16 ounces of whole button mushrooms, washed
  • 1 small sweet onion, diced
  • 1/2 cup fresh parsley, chopped
  • 2 tbsps. dried cranberries
  • 4 garlic cloves, minced
  • 2 tbsps. all-purpose flour
  • 1 small sweet onion, diced
  • 14 ounces of low-fat, reduced-sodium, no MSG chicken broth
  • 1/2 cup dry white wine
  • 1 tbsp. thyme
  • Sea salt and fresh-ground black pepper to taste


  1. Preheat the oven to 350°F.
  2. Brown both sides of the pork chunks in a mist of olive oil in a deep non-stick plan.
  3. Browning takes about 6 minutes.
  4. Remove the pork chunks from the pan and set aside.
  5. Add the onions to the pan and sauté until translucent.
  6. Add the garlic to the onions and sauté’ on low for an additional minute.
  7. Stir in the wine, chicken broth, flour, cranberries, thyme, salt, pepper and bring to a boil.
  8. Lower the heat to Low and add the pork cubes, mushrooms, apple slices and sweet potatoes.
  9. Simmer for 5 minutes on low and stir the ingredients together.
  10. Transfer the pan to the oven or transfer the items in the pan to a deep baking dish.
  11. Bake covered with foil for 40 to 45 minutes.
  12. Remove from oven and sprinkle with parsley.
  13. Serve over no-yolk egg noodles or rice.
