This is a quick an easy 10 Minute Salad. Just let the seasonings in the Near East Roasted Garlic and Olive Oil Couscous mix add all of the flavor. No other dressing is needed. I cheated by using canned beans and a boxed Couscous mix.
Fast, easy, high fiber, low fat and tastes good!! Perfect!! We brought this salad to a “pot-luck” dinner tonight and it was a hit!! Even my teenage daughter who usually says “yuk” to salads loved it.

High Fiber Couscous, Beans, Cucumber and Fresh Parsley Salad

It’s a little high in sodium because of the salt in the couscous mix.

Ingredients

  • 1 box of Near East Roasted Garlic & Olive Oil Couscous
  • 1 can of red kidney beans, rinsed and drained
  • 1 can of garbanzo beans, rinsed and drained
  • 1/2 a bunch of fresh parsley chopped
  • 1 cucumber peeled and chopped

Instructions

  1. Prepare the couscous per the instructions on the box.
  2. After the couscous cools to room temperature, toss in the remaining ingredients.
  3. Chill for 1 hour before serving.
